IRISH COFFEE with Séan Cummings By Judy Brotton Following the demise of the old Séan Cummings Irish Pub and “funeral procession” to the new location at 7522 N. May, it’s pennies on the bar and business as usual! Open at 4 p.m. seven days a week, experience a real Irish pub scene on Sundays when any number of musicians stop in to jam.
On a snowy day, Sean treated us to coffee with just a nip of whiskey. There’s nothing like an Irish Coffee, sipped through the cream, to warm you even on Oklahoma’s coldest of days, especially when served with a side of Irish Soda Bread. He also made a creamy variation, then whipped up an Irish Mint milk shake – a treat for the young at heart! Sean does serve American food, but when you visit, try the traditional Irish fare, such as Bangers and Mash, Irish Stew, Corned Beef and Cabbage, Shepard’s Pie, and thick Potato Soup. TRADITIONAL IRISH COFFEE Place 2 sugar cubes (or 2 tsp. sugar) in a coffee mug Add 2 ½ oz. Jameson Irish Whiskey Fill mug with hot black coffee Top with whipped cream Drizzle with Crème de Menthe IRISH COFFEE WITH BAILEY’S Place 2 sugar cubes (or 2 tsp. sugar) in a coffee mug Add 1 ¼ oz. Jameson Irish Whiskey And 1 ¼ oz. Bailey’s Irish Cream Fill mug with hot black coffee Top with whipped cream Drizzle with Crème de Menthe IRISH MINT In blender, place 1 large scoop of vanilla ice cream Add ¾ oz. white Crème de Cacao And ¾ oz. Crème de Menthe Top with ¾ oz. Irish Mist (a lovely Irish liqueur) Blend until thick Top with a sprig of mint SEAN’S FAVORITE IRISH TOASTS May your home always be too small To hold all of your friends.
